Vegan, gluten-free, oil-free, but full of greens. Nothing easier then this recipe for a quick delicious salad.
For all vegan friends, some of you probably know about Emilie Eats but if you don’t I will tell you that she is 20 years old, she became vegan in 2013 and because she loves food, nutrition and healthy life, she is an inspiration for awesome vegan recipes and of course a healthy vegan blogger.
Here is what she called “Green Goddess avocado kale salad”
1 bunch kale, chopped
½ ripe avocado
2 lemons, juiced
1 zucchini, spiralized or chopped
1 cup shelled edamame
½ cup cilantro, finely chopped
3 tablespoons hemp seeds
1-2 teaspoons garlic, minced
Salt and pepper, to taste
